Earl Grey Tea Dessert Recipes :: Earl Grey Tea & Cherry Cakes

It's been a long time I haven't post the earl grey tea dessert recipes here. I just found the interesting recipe which contains great combination. "Earl Grey Tea & Cherry Cakes
Earl Grey Tea & Cherry Cakes
Ingredients:
  • 225g dried mixed fruit, soaked overnight in 150ml hot earl grey tea
  • 350g self-raising flour
  • 175g dark brown sugar
  • 100g glace cherries (chopped)
  • 1 egg, beaten
  • 2tsps mixed spice

Methods:
  • Preheat oven to 150C, Gas Mark 2. Then lightly grease 4 small ovenproof dishes with a little low-fast spread.
  • Place the soaked fruit in a mixing bowl.
  • Add the remaining ingredients, reserving a few cherries for decoration.
  • Mix well and spoon into the prepared dishes. Top with the reserved cherries and place in the centre of the oven.
  • Bake for 45 minutes to an hour, until fully cooked.
  • Allow to cool in the dishes. When cooled, wrap the cake in Cellophane until ready to eat.

Earl Grey Tea Dessert Recipes :: Earl Grey Tea & Baileys Milk Chocolate Mousse Cake

I can honestly say that this is gonna be the most luxurious earl grey tea dessert recipe!!! It's might a little bit hard to do this recipe but trust me, it will worth!!! The recipe I'm talking about is "Earl Grey Tea & Baileys Milk Chocolate Mousse Cake
Earl Grey Tea & Baileys Milk Chocolate Mousse Cake

There are 3 main parts of this dessert: butter genoise as base, a layer of baileys milk chocolate mousse set in the middle, and earl grey tea mousse on the top. It might sound very time consuming but each part takes only a short amount of time to complete with non-complicated steps. 


This recipe makes 8 individual cakes using 6-cm cake rings and dome molds.


Ingredients:
- For the butter genoise
  • 2 eggs
  • 40g plain flour, sifted
  • 40g sugar
  • 20g unsalted butter
- For the baileys milk chocolate mousse
  • 130g whipping cream
  • 80g milk couverture
  • 20g baileys liquor
  • 2.5g gelatin
- For the earl grey tea mousse
  • 175g whipping cream
  • 125g fresh milk
  • 50g egg yolks
  • 40g sugar
  • 11g earl grey tea leaves
  • 2.5sheets gelatin

Methods: 
- For the butter genoise
  • Preheat oven to 180C.
  • Hand-whisk eggs and sugar over bain marie till mixture reaches40C.
  • Using an electrical whisk beat eggs and sugar on high speed till fluffy and peaks form.
  • Fold flour into egg mixture in 3 batches. (be careful not to over mix) 
  • Melt butte over bain marie, add a scoop of egg and flour mixture, mix well.
  • Fold mixture back into remaining egg and flour mixture and fold gently till batter surface is uniformly shiny.
  • Pour into 9-cm round cake tin and bake for 18minutes.
  • Let cool before cutting into small 5-cm rounds placed at the bottom of lined 6-cm cake rings.
- For the baileys milk chocolate mousse
  • Beat whipping cream on medium speed till soft peak forms, set aside.  
  • Soak gelatin sheet in cold water for a few minutes till it blooms.  
  • Melt gelatin sheet over bain marie, then add 1 teaspoon of whipped cream and mix well.  
  • Keep gelatin mixture over bain marie.  
  • Melt milk couverture over bain marie.  When its fully melted, fold in 1/3 whipped cream, then add in gelatin mixture and mix well.  
  • Fold in remaining 2/3 whipped cream into mixture, then gently mix in baileys.  
  • Pour mousse into lined cake rings over butter génoise.  
  • Leave for about 2 hours in refrigerator till set.
- For the earl grey tea mousse
  • Soak gelatin sheets in cold water for a few minutes till it blooms. 
  • Prepare earl grey milk by boiling earl grey leaves and milk in a small sauce pan.  
  • Cover sauce pan for 5 minutes after boiling to intensify tea flavor in the milk  
  • Strain leaves and ensure there is 80g of earl grey milk for the mousse. 
  • Boil prepared earl grey milk and whipping cream together.  
  • Whisk egg yolk and caster sugar till frothy, then pour in 1/3 of earl grey mixture and mix well.  
  • Pour egg mixture back into remaining 2/3 earl grey mixture and boil, stirring constantly, till mixture thickens slightly.  
  • Add gelatin leaves and mix well.  
  • Pour mousse into 8 pieces of 6-cm dome molds and leave for about 2 hours in refrigerator till set.

- Assembly
  • Remove baileys milk chocolate mousse from cake rings (using hot towel or flame torch).  
  • Gently remove earl grey tea mousse from dome molds (by carefully dipping bottom of molds in hot water, taking care not to allow water into the mousse) and place each dome on top of each baileys milk chocolate mousse layer.
  • Wrap exterior of individual cakes with dark chocolate, leaving top of dome layer visible.  
  • Top with dark chocolate decoration if desired.

Earl Grey Tea Dessert Recipes :: Earl Grey Tea Brownies With Lavender Honey Ganache

It's time for everyone who loves BROWNIES. One kind of brownies that I love the most is fudge brownies. But this time let's try the new one!! "Earl Grey Tea Brownies With Lavender Honey Ganache"
 Earl Grey Tea Brownies With Lavender Honey Ganache

Ingredients:
6oz bittersweet chocolate
6oz unsalted butter
6oz eggs
5oz cake flour
13oz granulated sugar
1tbsp loose leafs earl grey tea, ground in a coffee grinder
1tbsp vanilla extract
3/4tbsp baking powder
1/2tbsp salt


Directions:
1. Preheat oven to 350F. Spray or butter pan.
2. Melt the bittersweet chocolate with butte over a double boiler.
3. While the chocolate is melting, whip the eggs and sugar in a large mixer bowl fitted with the paddle attachment for 10 minutes.
4. Combine earl grey tea powder, flour, baking powder and salt. Sift.
5. Add the melted chocolate and vanilla to the eggs. 
6. Stir by hand to blend completely.
7. Fold in the flour, mixing until just combined.
8. Spread batter evenly into prepared pan.
9. Bake at 350F for 35-40minutes, or until an inserted tester comes out with just a few crumbs attached.
10. Allow to cool, then add ganache and garnish with crystallized lavender.

Earl Grey Tea Dessert Recipes :: Chocolate Earl Grey Tea Truffles

"Chocolate Earl Grey Tea Truffles", sounds weird again. But you will see how interesting this recipe is!!!
Chocolate Earl Grey Tea Truffles

Ingredients 
  • 160ml heavy cream 
  • 3-4tsp loose Earl Grey tea leaves
  • 2tbsp unsalted butter
  • 170g high-quality dark chocolate
  • 1cup of unsweetend cocoa powder, transferred to a bowl
Instructions
  • Combine cream and butter in a saucepan and bring to a boil, then remove from the heat.
  • Add 3-4tsp of earl grey tea leaves and let rest for about 5 minutes.
  • Chop dark chocolate into smaller pieces or use a grater and transfer it to a bowl.
  • Strain cream though a sieve onto grated/finely chopped chocolate, discarding the tea leaves.
  • Whisk until smooth.
  • Cover ganache and chill for at least 4 hours or over night.
  • Portion ganache teaspoon-wise, dust your palms with cocoa powder and roll each piece of the ganache into a ball. This is gonna be a fun part and messy one. Drop several balls at a time into the bowl of cocoa and swivel to coat. 
  • Store at cool temperature.

Earl Grey Tea Dessert Recipes :: Almond & Earl Grey Tea Cupcakes Recipe

Here comes, the recipe for everyone who loves cupcakes!! But this is not just an ordinary cupcake recipes. It's Almond & Earl Grey Tea Cupcakes


Almond & Earl Grey Tea Cupcakes

Let's start with the cupcake itself, we will need all these ingredients:

1 1/2 cups of flour
1/2 cup unsalted butter, at room temperature 
1 cup of sugar
2 eggs
1/2 cup milk
 2 tbs. baking powder 
1/2 tsp. salt 
1/4 tsp. almond extract 
2 tbsp. of loose Earl Grey tea leaves.



And follow step-by-step:
1. Preheat oven to 350 F. 
2. Fill a cupcake pan with liners. 
3. Beat the butter until creamy, then add the sugar and beat until fluffy. 
4. Add the eggs one at a time, making sure that they are incorporated thoroughly. 
5. In a bowl, combine the rest of the dry ingredients, including the tea leaves. 
6. Add half of the dry mixture. 
7. Add the milk then the remaining flour, stir until combined. 
8. Fill cupcake liners about 2/3 full. 
9. Bake for 15 – 20 minutes, rotating halfway to ensure even baking. 
10. Let cool completely before frosting.


The ingredients for the icing: 
2 cups confectioner sugar
1/4 cup butter at room temperature  
1/4 tsp almond extract
milk, enough to make preferred consistency.





Last four steps for almond buttercream:
1. cream the butter. 
2. Add the sugar and almond extract. 
3. Add milk slowly until you reach the desired consistency - you might not use all the milk. 
4. Beat until smooth.

Earl Grey Tea Dessert Recipes :: Earl Grey Tea - Caramel Pudding

Oh... well, today me and my friends went to many places. "After You Dessert Cafe" is my favorite one for today!!! We ordered many different dessert dishes!! They were great!! I also had  "Earl Grey Squash Jelly Tea"- glass of earl grey tea with some jellies. I bet most of you guys never tried this kind of drink!! But unluckily, i still can't figure out about how to make "Earl Grey Squash Jelly Tea" yet. When ever I find out, i will update here as soon as possible!!! 

Lucky for you guys! I found another interesting earl grey tea dessert recipe!!!
"Earl Grey Tea - Caramel Pudding" 
we will have to prepare 2 separated parts of ingredients:


1st part - Ingredients for the pudding are
  • 2 eggs
  • 3tbsp of Earl Grey Tea leaves
  • 4 egg yolks
  • 500ml of milk
  • 80g of sugar
2nd part - Ingredients for the caramel sauce are
  • 100g of sugar
  • 2tbsp of water
  • 50ml of hot water
After we have all the ingredients, then let's start by preheat oven to 170C(330F).
  1. Pour 1/2 the milk and tea leaves in a small saucepan, boil over medium heat for about 5 min. Strain tea and add sugar and then pour the other half of the milk. Finally we will get milk tea!!
  2. Beat egg and egg yolks in large bowl but careful not to generate too much foam. Add milk tea which we already provided in step1, divide among six oven-proof containers.
  3. Place pudding cups in a shallow pan, fill the pan with 70-80C water until the water almost reaches the same level as the pudding liquid.
  4. Bake for about 30 minutes and cool in fridge for at least 1 hour before eating.
  5. While we waiting for the baking process, make caramel sauce by place sugar and water in saucepan and heat over medium heat. Do not stir. When color turns dark golden, remove from heat and add the hot water. Cool at room temperature.
Earl Grey Tea - Caramel Pudding

Lastly we will get approximately 6 puddings. To serve, pour caramel sauce on the pudding. Then we will get "Earl Grey Tea - Caramel Pudding".

Let's talk about "earl grey tea". . .

First of all...

Now, I would start with what is "Earl Grey Tea"?
A cup of Earl Grey Tea
"Earl Grey" is named after Charles Grey, British Prime Minister (during 1830-1834) who supposedly received the tea as a gift. Jacksons of Piccadilly claim to have first commercially produced the “real” Earl Grey tea, though this claim is contested. Earl Grey is a popular black tea blend distinctively flavored with bergamot oil from a citrus fruit called the bergamot orange. Earl Grey tea is often made with a slightly smoky black tea as a base, though recently green, white and oolong Earl Grey blends have become commercially available. 


       


Today, the tea is commonly found alongside the classic English Breakfast and other assortments, and can be served both with or without milk and cream. It can be used to make iced tea. And also used as ingredient for some desserts.
