Chocolate Cupcakes with Earl Grey Tea Frosting |
Ingredients for the cupcake itself are
- A cup cocoa powder
- A cup boiling water
- A cup unsalted butter
- 1/2 cup granulated sugar
- 2 cups packed light brown sugar
- 4 eggs
- 3 cups all-purpose flour
- A cup sour cream
- 2 teaspoons vanilla extract
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350 degree F.
- Fill cupcake tray with liners.
- In a bowl, dissolve cocoa in boiling water and set aside to cool.
- Beat cream butter and sugars until fluffy.
- Add eggs one at a time and beating well after addition.
- Add vanilla
- In a separate bowl, combine flour, baking soda, baking powder, and salt.
- Add to batter, alternating with the sour cream.
- Add cocoa mixture and mix well.
- Spoon into muffin cups, filling about 2/3 full.
- Bake for 13-15 minutes.
- Cool for 5 minutes in pan.
- Remove to wire rack to cool completely.

Second. . .the earl grey tea frosting
Ingredients
- 2 earl grey tea bags
- 6 cup confectioner's sugar
- 12 ounces softened cream cheese
- 12 tablespoons unsalted butter
- 1 tablespoon vanilla extract
Instructions
- Empty contents of tea bags into a grinder.
- Grind until fine powder.
- Sift together with confectioner's sugar, and set aside.
- Beat butter, cream cheese, and vanilla with paddle attachment on medium speed for 5 minutes.
- Beat in sugar/tea mix a little bit at a time.
- When it is all in, beat another 5 minutes on medium speed.
- Spread on cupcakes.
- Don't forget about the decoration for cupcakes!!
